takes care of the lands that produce the most part of the forage used for the cows feed. All the seeds are selected and guaranteed by the Agricultural Consortium of Bologna and Modena (O.C.D.E. system according to CEE rules) in order to safeguard the complete product’s traceability.

the pioneer of the family, Gualtiero Pelloni, at the end of the 19th century used to produce a fine curd, still using faggot fire. His grandson Athos encouraged the industrialization of the productive processes as well as a wide scale production. Nowadays his great-grandson Alessio keeps running the family company according to the craft premises inherited from the familial tradition, together with an accurate management of the companies involved in the productive chain and a particular attention regarding the environment safeguard.
